Spicy Fudge Babies

Years ago, my bro-in-law went on the Paleo diet. Years ago, a lot of people thought this sounded kooky. “Paleo, as in Paleolithic? What, do you hunt for your food and cook it over a fire?” It sounded like a good, healthy way to eat, but imagining a world without cheese or bread made me sad. And then I went the vegetarian route. Cavemen didn’t eat tofu, apparently.

Now it seems like everyone is jumping on the Paleo wagon. Rachel just threw an engagement party for her little brother and his fiancee. When I asked if there was anything I could make, she said that most of her relatives were eating like cavemen! Always up for a challenge, I said I’d make a Paleo-friendly dessert and set off googling. The first hit (maybe due to my location?) was from the Austin Post for things called Fudge Babies by Chocolate-Covered Katie. After reading a bunch (okay, that’s being generous) of other possible recipes, Fudge Babies it was.

Hello, Rhubarb, my new friend…

(…I’d like to bake with you again?)

I need help.

Guess what??  I have just become acquainted with rhubarb!  Yep, that red celery-ish stuff had never graced my grocery basket or even tastebuds with its presence, but this nonsense is officially over.

My friend Jill invited a couple other friends and me over for dinner a few days ago to help her tackle the yummy grilled vegetable terrine that she had made.  Who can say no to that?  Seeing this as a golden opportunity to bake something, it seemed like the perfect situation to try out that totally foreign fruigetable.  (The more you know: It’s technically a vegetable, but was deemed a fruit in the US in 1947.)

pretty kale is pretty.

What’s all this fuss about astrology lately?  I’ve never really been into it, but will admit that when I found out my sign would change, it made me sad for some reason.  Of course then I read that it only affects those who aren’t out of diapers yet, so hooray.  (poor babies.)

This post can be an example of why I’m a total Aquarius.  You’ve probably seen some kale smoothie recipes floating around on the blogosphere, right?  Being a somewhat recent kale fanatic who loves smoothies, I was instantly on board.  I decided to try out a few of these recipes and make my own, then report to you.  Consider it my contribution to making the world a better place.

Annnd I had to be weird and make faces out of food again.  I can’t help it.

Chocolate Cupcake with PB Frosting

How have I never posted anything with peanut butter and chocolate??

It’s totally one of my favorite combos, so this is blasphemy.

But guess what?  Yesterday I hooked these two up in a tasty way: peanut butter frosting-topped chocolate cupcakes!

butters, sugar, salt, vanilla
beat it!

Tomorrow is Jill’s birthday, but a group of us celebrated it last night.  Chocolate/peanut butter is her favorite combo, so while I was unsure of what to make her, there was never a question in the flavor department. Continue reading →

Pumpkin French Toast

Yesterday I went to a David Sedaris reading/signing and he was hilarious.  If you ever get the chance to see him, GO.  He read some stories from his new book (Squirrel Seeks Chipmunk), shared snippets from his diary, and answered several questions.  Though I’ve read a few of his books, I haven’t read the new one yet, but really liked what we heard from it.  It basically seems to be a collection of short stories from the perspectives of personified animals and insects, but coming from the mind of David Sedaris, they’re super clever and funny.

My friend and I waited in line for the signing, but there were SO many people there that we hardly moved.  He had asked people to tell him jokes (he’s been collecting them this book tour!), so I’m guessing that’s part of why it took so long.  Oh, and we didn’t manage to stick around the whole time.  I have no idea how long he stayed there to sign books, but it had to have been at least until the store closed!

Avocado Lime Shake

I love really simple things that turn out to be really tasty.  If you’re doubting the tastiness of this shake, fear not!

Yes, you would be drinking an avocado. Yes, it looks like liquid guac.

Peanut Butter Banana and Honey Smoothie

Who likes peanut butter, banana, and honey sandwiches??  If you’re ever forced to be on a liquid diet (wisdom teeth?), you’re in luck!   Well, you’re also in luck if you like smoothies.

Legend has it that peanut butter banana smoothies are pretty epic, so I finally made one this morning.  Mm-mmm, gooood!   It was super creamy, and not overly sweet.  The hardest part is cleaning the blender. Continue reading →

Raspbanana Muffins

These might as well be called Lazy Muffins.  You see, I bought some bananas a few days ago, but didn’t eat them fast enough.  I’ve never really thought of myself as a picky banana eater, but evidently I am.  Green is no good, but neither are brown spots.  I like my bananas perfectly yellow, apparently.

Anyway, when life gives you overripe bananas, make carbs, right?  So that’s what I decided to do.  But then the two eggs I had were past the expiration date and I was too lazy to go buy some more.   You may assume that I decided to add raspberries simply because I had some. Continue reading →
