So I may be making some pie for Thanksgiving. Could you tell?
While I stress about all that could go wrong, allow me to leave you with this gem:
“Choosing between a metal pie pan and a glass or ceramic pie dish depends on the type of pie you are baking. Double-crust and lattice-top pies, such as apple and peach pies, should be baked in metal pans. […] Ceramic pie dishes should only be used for cobblers, crisps, and other crustless fruit desserts.”
from p. 124 of this book by Williams-Sonoma:
Those metal pans just aren’t fabulous enough, are they, W-S?
(I know…I have that pie dish, too.)

p.p.s. There is some swearing.
